Overview

PizzaOps AI is a production operations management application for pizza manufacturing, built with IRIS Forge on the IRIS Foundry platform. Plant teams get one view of the line, from ingredient intake through dough, toppings, baking, freezing, and packaging, with AI that predicts issues and catches defects before product ships.

  • Manufacturing dashboard - OEE, availability, performance, and quality against target, hourly production rate against plan, and daily progress toward the shift goal.
  • Live process monitoring - dough mixer speed, topping dispenser flow, oven and freezer temperatures, and packaging speed are each tracked against their operating range, with alerts the moment a process drifts.
  • Ingredient monitoring - stock levels, days of inventory remaining, daily usage, supplier quality, and next deliveries for every ingredient, with reorder alerts before a shortage stops the line.
  • Baking management - oven temperature profiles by zone against target and thresholds, plus bake time, crust color score, and energy efficiency for every run.
  • AI quality detection - AI scores product quality and categorizes defects such as topping distribution, crust issues, size and shape, packaging, and foreign material, flagging high-severity issues for immediate action.
  • Dedicated process modules - dough preparation, topping application, freezing, and packaging efficiency each get their own view of performance.
  • AI across the plant - predictive maintenance, production scheduling, energy optimization, and waste reduction help teams raise throughput and yield while cutting downtime and scrap.
